Ladybug Luggage Gourmet Cookies & Cakes: May 2009

A chocolate cake with chocolate ganache for a wonderful couple that is celebrating their first Mother's Day.

Cinnamon Bubbles

A.
4 1/2 teaspoons yeast
2 1/2 cups warm water

B.
3/4 cup sugar
3/4 cup vegetable oil
2 eggs
2 1/2 teaspoons salt

C.
7 1/2 cups flour

D.
2 cups sugar
2 tablespoon cinnamon
1 tablespoon cocoa

E.
1 cup butter melted

1.Dissolve A - yeast and water = yeast mixture.

2.Combine B - sugar, oil, eggs, salt = sugar mixture.

3.Combine A & B - yeast mixture and sugar mixture= yeast sugar mixture.

4.Add C - 4 cups flour to yeast sugar mixture until smooth. Stir in remaining 3 1/2 cups of flour to form a soft dough. Cover and let rise until doubled in size.

5.Combine D - sugar , cinnamon & cocoa in a bowl set aside=cinnamon mixture.

6.Deflate dough (punch down= stress relief) pinch off small pieces of dough, dip in melted butter then into cinnamon mixture to coat.

Bake at 325F for 40 minutes (or chill dough overnight- bake for 45 minutes).
